Queijaria Flores (Flores Cheese)

Queijaria Flores, a family business, is an agriculture project developed in the natural area of Tejo Internacional Park. Animals, raised in open fields, and olive trees are the raw material produced in their farm, with organic certification. The products are transformed in a small traditional workshop/sales point in the village.

Flores Cheese is made in a traditional atelier in Rosmaninhal. The producers use the water from the Cynara cardunculus flower to curdle the animals’ milk, a technique used for ages. Goat and chhep cheeses are made with all the care and affection, by the hands of those who know how to maintain the flavour and preserve the gastronomic tradition.
