Located in the city of Cerro Corá, within the space of Pousada Colina dos Flamboyants, Restaurante da Colina is one of the main establishments of the branch in Serra de Santana, a flat top relief, with an average elevation of 600 m and which has a microclimate of low temperatures.
At Restaurante da Colina, the flavors of Seridó are present and revered in contemporary and affective cuisine. With the concern to include raw materials from local producers, with quality benefited by the climate and soil conditions of the mountains. Dishes such as butter cheese pudding stand out, which combines a classic cheese from the Seridó region with the creaminess of puddings and is complemented by rapadura molasses.
The relationship with the territory of the Seridó UNESCO Global Geopark is also expressed in the flavors of the restaurant, such as the dish Nascente do Rio Potengi Geosite, a creation inspired by the local geodiversity and which contains sun-dried meat produced in the territory with coriander pesto as well of local origin.
The quality of the dishes is directly associated with the quality of local raw materials, which are mostly from the geopark’s own territory. The butter cheese, for example, produced in the Serra de Santana region, is of great quality as the cattle benefit from the milder temperatures, while the fertile soil of the Serra dos Martins Formation allows the production of different ingredients for the dishes.
The kitchen run by the hands of chef Jane Silva enchants and is also favored by the landscape that frames the restaurant, granite blocks under which the visitor can enjoy an unique experience in Seridó.
