Quinta Corgo D’Água is a sausage production company, based in Canelas, in the Arouca UNESCO Global Geopark. The project began in 2014 by Nelson Cardoso and his parents, initially with the sale of suckling pigs and, later, the idea of traditional Portuguese smoked meats emerged. All products are homemade by the traditional way. Salpicão, mouras, blood sausage, cut sausage, ham, bacon, smoked ham, ear and sale of pork lard are the products currently sold by this enterpriseSlate marks the traditional architecture of the village of Canelas, a noble and excellent raw material, from the Valério Quarry, located near the village, where the fossils of international relevance of Arouca UNESCO Global Geopark, exposed in the Trilobites Museum, were rescued. Slate extraction, agricultural practices (subsistence) and livestock farming mark the day-to-day of the inhabitants of this region. The Cardoso family’s pig farming, in the village of Canelas, boosted the family’s production of traditional sausages, carefully prepared, which brings out the quality of the meat.
