The mountain climate, with great contrasts, offers us delicious products. And so, if it resists it can only be of great quality. It is enough for us to look closely into the eyes of a hen to see that they descend directly from the dinosaurs, with a penetrating gaze, almost fierce, with a powerful footprint. And we can imagine its crest or chins as defense elements or courtship tools in an ancient omnivore. And it is those footprints that are lit among the apple trees of our Quintanas de Hormiguera farm, in the plain of Arroyo de Quintanas, on the border with Cantabria.
